Sunday. It is my most and least favorite day of the week.
It is my most favorite day because I get to sleep in (meaning, until at least 7 AM and sometimes even 8 AM). Also, I make pancakes and the good coffee for breakfast. Our family goes to church together, then we come home and watch football. I usually have time to take a nap, then I cook Sunday family dinner. It feels special since we eat in the dining room, because the kitchen table is in a permanent state of chaos – covered with books, homework and art projects. Sophia even helps me set the table in the dining room with the good plates, pretty glasses and napkins.
Sunday is also the day I start getting ready for the week ahead, which makes it my least favorite day of the week. I often spend a few hours prepping food and inevitably, I need to make a last-minute trip to the grocery store for dog food or laundry detergent. Of course laundry has to be sorted, homework must be finished, and the kids’ bath/bedtime enforced after the freedom enjoyed on Friday and Saturday nights. I struggle to get to bed on time too, since I stay up late to watch Sunday night football.
This week, I tried to get ahead of the last-minute Sunday night rush by stopping at Sprouts on the way home from church. We mainly needed the essentials. Apples, cantaloupe and grapes for healthy snacks. Bell peppers, onions, avocado, potatoes and broccoli so I could prep for dinner. I also found sales in the meat department, so I got fresh chicken and ground beef. Finally, I stopped by the dairy aisle for my favorite Siggi’s yogurt.
Earlier that morning, I made pumpkin muffins for breakfast. My recipe for the Very Best Pumpkin Muffins calls for cinnamon, nutmeg and ground cloves. If you are like me, you rarely use nutmeg or cloves other than for fall baking. Did you know at Sprouts, you can buy spices by the ounce instead of an entire jar? Since I finished off my nutmeg that morning, I bought an ounce so I can make more pumpkin muffins in the next few weeks. Honestly, these muffins get two thumbs up from my pickiest eater so I can guarantee they are delicious!
By this point, Sophia reminded me she was STARVING and getting cranky. I told her to pick one of the soups from the hot food bar, then I grabbed a rotisserie chicken and some focaccia bread from the bakery. This meant I could serve soup and sandwiches for lunch about five minutes after we walked in the door at home. Almost all the fruit and vegetables I bought were on sale. Even Sophia noticed, she said, “Wow, that is a lot cheaper than what we spend at Target!”
