Today I am sharing my kids’ FAVORITE meal, magic mini meatloaves. Any meal that makes my kids cheer when they see it come out of the oven, then rush over to the table for dinner is a huge winner! It is easy enough to make on a weeknight, or you can make the meatloaf in advance (like on a Sunday prep day) and freeze it for later in the week.  My father-in-law even asked me for the recipe, because my kids were asking for it at his house when they spent the night over the weekend.

This recipe was inspired by a meal that a sweet friend brought me when I was home on maternity leave. It is delicious comfort food and one of the recipes I highly recommend if you have kids.  For my mini meatloaves, I use ground turkey instead of ground meat to lower the fat.  I’ve also used organic, grass fed beef if it was on sale at the grocery store that week.  To keep it hearty and healthy, I added rolled oats to the mixture.  Milk (or a non-dairy alternative) is for moisture and of course cheddar cheese is added for taste and for fun.  My kids will eat almost anything that includes cheese in the recipe, and these mini meatloaves are their favorite.

This is also an easy meal to cook with your children.  It is a one bowl recipe, so they can help add the ingredients and stir them together.  Older kids (6 and up) could also help you divide the mixture into 8 equal portions and shape it into mini meatloaves.  Serve with glazed carrots and cornbread muffins (or green beans and potatoes) for a complete meal your entire family can enjoy together.  Then watch as those mini meatloaves disappears like “magic!”

You can easily double this recipe and freeze the second batch of mini meatloaves for later in the month. Thaw in the refrigerator overnight, top with the sauce and bake according to the recipe.

Mini Meatloaves

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 8 mini meatloaves

Serving Size: 2 mini meatloaves

I call them magic mini meatloaves because when I put them in front of my kids, they disappear like magic!


    Mini Meatloaves
  • •1 1/4 pound of lean ground turkey (I use 93% lean)
  • •1/2 cup rolled oats
  • •1/2 cup low-fat shredded cheddar cheese
  • •1/4 cup milk (or dairy free milk, unsweetened)
  • •1/2 tsp onion powder
  • •1/2 tsp garlic powder
  • •1/2 tsp salt
  • •1/4 tsp fresh ground pepper
  • •1/2 cup ketchup
  • •3 tablespoons of brown sugar
  • •1 tablespoon of yellow mustard


  1. Pre-heat oven to 350 degrees F. Spray a 9x13 inch baking dish with non-stick spray and set aside.
  2. In a large bowl, combine the ground turkey, oats, cheese, milk, onion powder, garlic powder, salt and pepper. Mix well until all ingredients are combined, then divide the mixture into 8 equal sized portions. Shape them into miniature meatloaves and place in baking dish.
  3. In a small bowl, stir together the ketchup, brown sugar and mustard. Spoon mixture over the top of each meatloaf.
  4. Bake (uncovered) at 350 degrees for 30 minutes. Allow meatloaves to set for five minutes before serving.
